Simple "I'm tired and it's the end of the day" Chili

Serves about six one cup servings

2 - 15 oz. cans chili con carne
1 - 15 oz. can Mexican-style stewed tomatoes
1 tsp. dried minced garlic (you can add more if you like(or need to))
sour cream (optional)

Combine first three ingredients in a medium saucepan and heat over medium heat to desired temperature.
Top individual servings with sour cream to make it nice and creamy.

Note - this is a very easy and quick meal with the power of tomatoes and garlic! ^_^

BBQ Bacon Meatloaf

No joke! Best EVER.

Prep. time: 20 min.
Cook time: 45-50 min @ 350 degrees F.
Makes 1 - 9x5 loaf

Meatloaf Ingredients:
1/4 cup milk
1 egg
1 1/2 lbs. ground beef (95% lean) *
1 1/2 lbs. sliced bacon - cooked crisp and crumbled
1/2 cup chopped onion
1/2 cup breadcrumbs
1/2 cup ketchup
3 tbsp Worcestershire sauce
1/2 tbsp minced garlic (or more)
1 tsp Dijon mustard (or regular yellow)
1 tsp ground coriander seed(or ground terragon)
1 tsp celery seed
BBQ sauce (recipe follows)

1. In a large bowl whisk together milk and egg.
2. Add everything else except BBQ sauce; mix well.
3. Transfer to a 9x5 inch loaf pan. Gently press into pan making sure there are no bubble pockets.
4. Place in middle of oven and bake.
5. After baking, let stand on cooling rack for 5 min. Slice and top with BBQ sauce.
Enjoy!

*You can mix in different meats in this like half beef/half pork or 1/3 each beef, pork, bison.

BBQ Sauce ingredients:
1 cup ketchup
1 tbsp onion powder
1/4 cup white vinegar
1 tbsp brown sugar
1 tbsp honey
1 tbsp Worcestershire sauce
1 tsp chili powder
1 tsp ground cayenne pepper
2 tbsp prepared mustard
1 tsp garlic powder

1. Combine all ingredients well and let simmer in saucepan for about 20 minutes, stirring occasionally.

Chicken and Potato Curry

5 chicken tenders
2 medium red potatoes, chopped, with skin on, into 1/2 cubes
1 1/4 cup water
1/3 cup mayonnaise
1/3 cup milk
2 tbs. dried chopped onion (or 1/4 of a fresh onion, chopped)
1 tbs. Indian curry
1/2 tsp. ground coriander seed
1/2 tsp. Chinese five spice
1/2 tsp. dried minced garlic
1/2 tsp. fresh ground black pepper
Dash of sea salt
Prepared yellow mustard - to taste
Olive Oil

1. In a wok combine about a tbs. or two of olive oil with the spices, onion, garlic and salt. Cook around 250 degrees F for a couple minutes, then add water and potatoes. Cook with lid on, stirring occasionally till potatoes are mostly done.

2. Meanwhile, grill chicken on stovetop on a grill pan till cooked through.

3. In a small bowl whisk together mayo and milk. Add to wok. Cut chicken into cubes and add to wok. Simmer for a few minutes before serving on brown rice. Drizzle mustard on top for an added flair of flavor!

Poached Eggs

My personal favorite, and the easiest and fastest way too cook an egg.

1 large egg
balsamic vinegar
water

Fill an 8 oz. Microwaveable custard dish half full with water. Add a dash or two of the vinegar and stir. Microwave on high for 30 seconds, then stir again. Carefully crack the egg into the dish, cover. Microwave on high another 30 seconds, or until cooked through.
Makes 1 serving

Note: I always sit the dish on a small plate so it's easy to take out, because it gets super hot. Also, I let it sit for a bit in the microwave while I make some toast, which I eat the egg on/with. I always drink some sort of citrus juice or citrus cocktail with this, and eat it as a breakfast. Sometimes I cook some bacon to eat with it as well.

Mustard Sauce

1/2 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon ground mustard
paprika to taste

Mix all ingredients well and refrigerate for about an hour and serve chilled.

Note: I served this with grilled chicken tenders with a few different sauces and it was the favorite one!
